— Dashi’s executive chef Shuji Hiyakawa, descends from three generations of Udon makers, and has learned his craft as a young child in his father’s noodle shop in Fukuoka, Japan. A protégé of Iron Chef Masahuru Morimoto, Hiyakawa recently served as executive sushi chef at Kuro, the acclaimed Japanese restaurant at the Seminole Hard Rock Hotel & Casino in Hollywood.

Soup and udons are part of chef Hiyakawa’s culinary DNA, with recipes rooted in his childhood. Sushi and sashimi are sourced from across the world, with much of the fresh fish flown in from Japan.
