Hotaru Madrid’s menu is a testament to the art of sushi, emphasizing the freshness and quality of each ingredient. Signature offerings include the Truffle Sashimi, combining salmon, yellowtail, and lean tuna with truffle and caviar, and the Tartufo Roll, featuring spicy tuna, avocado, and seared tuna topped with truffle mayo and chili serrano. The restaurant also offers two well-balanced Omakase menus for those seeking a curated culinary journey.

Chef
Chef Alejandro Pérez, the culinary director of Hotaru Madrid, embarked on his journey into Japanese cuisine at the age of 18. His extensive experience includes working with renowned establishments such as Nobu and Morimoto. In 2017, he partnered with Grupo Costeño to launch Hotaru, aiming to provide a unique dining experience that highlights the fusion of Japanese flavors with global ingredients. His dedication to the craft is evident in every dish, reflecting a deep respect for tradition while embracing contemporary culinary techniques.
