THE AMERICAN ACADEMY OF HOSPITALITY SCIENCES WELCOMES VOLKER ROMEIKE AS ITS NEWEST INTERNATIONAL TRUSTEE

The American Academy of Hospitality Sciences (AAHS) is proud to announce Mr. Volker Romeike as the newly appointed International Trustee. With more than forty years of experience in the food and hospitality industry, Mr. Romeike has established a longstanding career defined by excellence, leadership, and international expertise.
Mr. Romeike began his culinary training in Germany in 1979 at Landhaus Spickermann, completing his apprenticeship and earning certification as a professional cook from Berufsschule Duisburg in 1982. After completing his education and military service, he began working internationally in 1984, serving as sous chef in several hotels in Mexico before joining Hyatt Hotels Corporation in 1985. Over the next decade, he advanced through multiple Hyatt properties, including Hyatt Wilshire, Hyatt Regency Long Beach, Hyatt Regency Kauai, Grand Hyatt Wailea, Hyatt Regency San Diego, Hyatt Regency Cerromar Puerto Rico, and Hyatt Regency Maui, participating in five major hotel openings during this time.
In 1995, Mr. Romeike transferred to Grand Hyatt Los Cabos as Executive Chef, where he oversaw the pre-opening and led the creation of the flagship restaurant Pitahayas. In 1997, he joined Hacienda del Mar Resort and Spa as Executive Chef, a position he held for twenty years, managing the resort’s flagship restaurant specializing in Pacific Rim cuisine. Under his direction, the restaurant earned numerous accolades, including sixteen consecutive years of the AAHS Five Star Diamond Award and five years of the Grand Luxury Award.
From 2017 to 2020, Mr. Romeike served as Corporate Chef for Olaren in Cabo San Lucas, overseeing kitchen planning, purchasing, staff hiring, and operations for multiple restaurant outlets at the Solaz and Hacienda del Mar projects. In August 2020, he opened his own establishment, Mirai Restaurant Los Cabos, where he currently serves as Chef and Owner, overseeing daily operations, staff training, purchasing, and menu development.
Mr. Romeike has been an active member of the international culinary community throughout his career. He has been a member of the Vatel Club de México since 1999 and previously served as a member of the Chaîne des Rôtisseurs México from 1998 to 2012. His work has earned multiple distinctions from the American Academy of Hospitality Sciences, including the Five Star Diamond Award for Restaurant Pitahayas (1999–2015), the Five Star Diamond Award as Chef Volker Romeike (2014), and the Grand Luxury Award for Restaurant Pitahayas (2016–2019).
The American Academy of Hospitality Sciences proudly welcomes Mr. Volker Romeike to its esteemed Board of Trustees.
