The Fulton

The Fulton is Chef Jean-Georges Vongerichten’s first seafood restaurant – located in an area of the city he fell in love with when he first encountered the energy of the former Fulton Fish Market in 1986.

In 2022, Chef Vongerichten introduced his most ambitious project to date: the Tin Building. Located in the former Fulton Fish Market and steps away from our restaurant, the 53,000 square-foot marketplace brings the story of The Fulton full circle and marks a new chapter for the historic Seaport.

A lover of art and design, Vongerichten was intimately involved in the curation of The Fulton’s interior and developed the concept in tandem with New York and Toronto-based design firm Yabu Pushelberg. The dream-like mural which envelopes the dining room—entitled South of Cape Horn—was hand-painted by artists Diego Castaño and Chandler Noah of the En Viu collective: Inspired by Jules Verne, the work pays homage to maritime culture and the mysteries of the deep.

At The Fulton, the Seaport District’s distinct nautical history has been woven into the textures of the space, which Vongerichten and interior designers Yabu Pushelberg have crafted as a place to reconnect New Yorkers and her visitors with the city’s maritime past.

Jean-Georges is involved in every aspect of his restaurants – concept, menu, architectural design, staff selection and trainings – in an ongoing effort to create restaurants that are both timely and enduring. Inspired by his travels, Jean-Georges is constantly developing fresh concepts and evolving as a chef and restaurateur, both adapting to and impacting the global culinary landscape.
